In my role at Hawkins Watts, I work mainly with hydrocolloids, aiming to understand their physical and chemical properties when used in food products. I enjoy working in the food industry because it allows me to better understand the complex properties of food and food ingredients. This knowledge is also highly transferable – I've been known to run ‘trials’ on my home-cooking just for fun! When I’m not at work you can either find me in the forest hiking or mountain biking or at home baking and knitting. My hobbies are a bit extreme at both ends, but I’ve found this combination works very well for my mental health.
